One of the biggest things I hear from people when they visit our Corolla restaurant is how much parity and monotony seems to plague the modern restaurant menu. Not that the food overall is bad, just that there seems to be very little originality in some of the restaurant offerings. Yes, there are tried and true items Americans have to have when they go out to eat in the Outer Banks.
Things like fried shrimp, crabcakes, burgers and steamed seafood are just a few of the must haves on any menu. For Americans food is more than nutrition, it is comfort. Reliable tastes give us that predictable comfort when visiting a restaurant in Corolla or the Outer Banks. But as Americans we also like a little adventure too.
Unique Seafood Dishes
By adventurous I mean new sauces and flavorings. I do not mean things that are, for lack of a better description, a little gaudy. I am not getting into this but you see some travel channel shows where the food looks more like a horror movie than a cultural interaction. My goal is to offer flavors that are good, but in new combinations that are pleasing to the ear, as well as the palette.
Fish With Fusion And New Flavor
One of my favorites is to take fish, and give it some zest or new flavorings that take people to a level of wow. Fish has often been the underprivileged step child of the main course meats, relegated to a life of stigmas that it is fishy or bland. But not here at Sunfish Grill.
Start with Fresh Fish And Seafood
Before I even get to sauces and flavorings I must add this one caveat. The fish for any recipe has to be ultra fresh. By ultra fresh, I mean caught recently from local waters as much as possible. Obviously if a fish does not reside in the OBX waters I have to ship it in, but if it does, it has to be caught here.
